Instructions
- Heat the olive oil in a large pot over medium-high heat. Add the beef cubes and brown them in batches, ensuring they are evenly seared.
- Remove the beef and set aside. In the same pot, add the chopped onion and minced garlic, cooking until onion is translucent.
- Pour in the Guinness beer, scraping up any browned bits from the bottom of the pot.
- Return the beef to the pot and add beef broth, tomato paste, carrots, and potatoes. Stir in thyme, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 2.5 hours, or until the meat is tender.
- For the soda bread, preheat your oven to 425ยฐF (220ยฐC).
- In a mixing bowl, combine flour, baking soda, sugar, and salt. Gradually add the buttermilk, mixing until a dough forms.
- Turn the dough out onto a lightly floured surface and knead briefly. Shape into a round loaf and place on a baking sheet.
