Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 Tbsp sumac
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp cinnamon
  • 1 large red onion, thinly sliced
  • 2 Tbsp olive oil
  • 4 pieces flatbread

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Combine sumac, cumin, coriander, cinnamon, salt, and pepper in a bowl.
  3. Rub spice mixture over chicken thighs; marinate for 30 minutes.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat.
  5. Cook sliced onions until softened and slightly caramelized.
  6. Move onions aside; sear chicken thighs for 3-4 minutes per side.
  7. Transfer skillet to oven; bake for 25-30 minutes until chicken is cooked through.
  8. Remove from oven; let rest for 5 minutes before serving.
  9. Serve chicken on warm flatbread; spoon caramelized onions on top.
