Sufganiyot are fluffy, round jelly doughnuts traditionally enjoyed during Hanukkah celebrations.

Ingredients

  • 1 packet active dry yeast
  • 1/4 cup warm water
  • 1/4 cup granulated sugar
  • 2 tablespoons butter, softened
  • 2 large eggs
  • 3 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup milk, warmed
  • 1 cup strawberry jam
  • 1/2 cup powdered sugar, for dusting
  • 4 cups vegetable oil, for frying

Instructions

  1. Dissolve yeast in warm water with a teaspoon of sugar and let it stand for 5 minutes until foamy.
  2. In a large bowl, mix sugar, butter, eggs, and salt. Stir in the yeast mixture.
  3. Gradually add flour and milk, alternating, until a dough forms.
  4. Knead the dough on a floured surface for 5-7 minutes until smooth.
  5. Place the dough in a greased bowl, cover, and let it rise for 1-2 hours until doubled.
  6. Punch down the dough and roll it out to 1/4-inch thickness.
  7. Use a round cutter to cut out circles of dough.
  8. Transfer the circles to a floured tray and let them rise for another hour.
  9. Heat oil in a deep pan to 350°F. Fry doughnuts 2-3 minutes per side until golden.
  10. Remove and drain on paper towels. Cool slightly.
  11. Use a piping bag to fill each doughnut with jam.
  12. Dust with powdered sugar before serving.
