Ingredients

  • 1 medium eggplant, cubed
  • 2 medium zucchini, sliced
  • 1 large red bell pepper, diced
  • 1 large yellow bell pepper, diced

  • 3 cloves garlic, minced
  • 14.5 oz can diced tomatoes
  • 2 tsp Herbes de Provence
  • 2 Tbsp olive oil

  4. Stir in the diced tomatoes and Herbes de Provence, and season with salt and pepper to taste.
  5. Bring the mixture to a simmer, reduce the heat to low, and continue to simmer for 20-25 minutes, stirring occasionally, until the vegetables are tender.
  6. Taste and adjust seasoning if necessary before serving the ratatouille hot.
