Ingredients

  • 1 cup barberries
  • 2 cups basmati rice

  • 1 Tbsp butter

Instructions

  1. Rinse the rice in cold water until the water runs clear. Drain and set aside.
  2. In a small bowl, soak the saffron threads in 2 tablespoons of warm water for 10 minutes.
  3. Heat the butter in a large pan over medium heat. Add the chicken thighs and cook until browned on all sides, about 5-7 minutes.
  4. Add the soaked saffron water to the pan along with the barberries. Cook for another 5 minutes, stirring occasionally.
  5. Add the drained rice to the pan and pour in enough water to cover the rice by 1 inch. Season with salt to taste.
  6. Bring to a boil, then reduce the heat to low, cover, and cook for 20 minutes or until the rice is tender and the liquid is absorbed.
  7. Fluff the rice with a fork and serve hot, garnished with extra barberries if desired.
