- 2 large eggs, beaten
- 1 cup panko breadcrumbs

- 1/4 cup brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Preheat the air fryer to 400°F (200°C).
- In a bowl, combine flour and salt. Place beaten eggs in another bowl, and mix panko and shredded coconut in a third bowl.
- Coat each shrimp in flour, then dip in the eggs, and finally dredge in the panko-coconut mixture.
- Place the coated shrimp in a single layer in the air fryer basket. Fry in batches for about 5-6 minutes or until golden brown.
- For the dipping sauce, combine pineapple juice, brown sugar, and soy sauce in a saucepan. Bring to a simmer over medium heat.
- Mix cornstarch and water together, then stir into the sauce. Continue cooking until the sauce thickens.
- Serve the shrimp hot with the pineapple dipping sauce on the side.
