  • 1/4 cup brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. In a bowl, combine flour and salt. Place beaten eggs in another bowl, and mix panko and shredded coconut in a third bowl.
  3. Coat each shrimp in flour, then dip in the eggs, and finally dredge in the panko-coconut mixture.
  4. Place the coated shrimp in a single layer in the air fryer basket. Fry in batches for about 5-6 minutes or until golden brown.
  5. For the dipping sauce, combine pineapple juice, brown sugar, and soy sauce in a saucepan. Bring to a simmer over medium heat.
  6. Mix cornstarch and water together, then stir into the sauce. Continue cooking until the sauce thickens.
