Sweet and nutty, these blueberry granola bars are a delicious and hearty snack perfect for on-the-go enjoyment.

Ingredients

  • 2 cups rolled oats
  • 1 cup dried blueberries
  • 1/2 cup almonds, chopped
  • 1/4 cup honey
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9" x 13" baking pan with parchment paper.
  2. In a large bowl, combine the rolled oats, dried blueberries, and chopped almonds.
  3. In a small saucepan over low heat, warm the honey and almond butter until melted and well combined. Stir in the vanilla extract and salt.
  4. Pour the honey mixture over the dry ingredients and mix well until fully coated.
  5. Press the mixture firmly into the prepared baking pan, spreading it evenly.
  6. Bake for 20-25 minutes, or until the edges are golden brown.
  7. Allow the granola to cool completely in the pan before lifting out using the parchment paper.
  8. Cut into 12 bars and store in an airtight container at room temperature for up to a week.
