Ingredients
- 2 cups rolled oats
- 1 cup dried blueberries
- 1/2 cup almonds, chopped
- 1/4 cup honey
- 1/4 cup almond butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a 9" x 13" baking pan with parchment paper.
- In a large bowl, combine the rolled oats, dried blueberries, and chopped almonds.
- In a small saucepan over low heat, warm the honey and almond butter until melted and well combined. Stir in the vanilla extract and salt.
- Pour the honey mixture over the dry ingredients and mix well until fully coated.
- Press the mixture firmly into the prepared baking pan, spreading it evenly.
- Bake for 20-25 minutes, or until the edges are golden brown.
- Allow the granola to cool completely in the pan before lifting out using the parchment paper.
- Cut into 12 bars and store in an airtight container at room temperature for up to a week.
