Ingredients

  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup almonds, toasted and chopped
  • 1 cup fresh blueberries
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Let it cool slightly.
  3. In a large bowl, combine the cooked quinoa, oats, honey or maple syrup, toasted almonds, and salt. Mix well.
  4. Gently fold in the blueberries and vanilla extract until evenly distributed.
  5. Pour the mixture into the prepared baking pan and press it down evenly with the back of a spoon.
  6. Bake for 20-25 minutes or until the edges are golden brown.
  7. Let the bars cool completely in the pan before cutting into squares. Store in an airtight container.
