Ingredients
- 1 cup quinoa, rinsed and drained
- 2 cups water
- 1 cup rolled oats
- 1/2 cup honey or maple syrup
- 1/2 cup almonds, toasted and chopped
- 1 cup fresh blueberries
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Let it cool slightly.
- In a large bowl, combine the cooked quinoa, oats, honey or maple syrup, toasted almonds, and salt. Mix well.
- Gently fold in the blueberries and vanilla extract until evenly distributed.
- Pour the mixture into the prepared baking pan and press it down evenly with the back of a spoon.
- Bake for 20-25 minutes or until the edges are golden brown.
- Let the bars cool completely in the pan before cutting into squares. Store in an airtight container.
