These no-bake cashew and date protein squares are naturally sweet and packed with energy, perfect for a quick snack.
Ingredients
- 1 cup pitted dates
- 1 cup raw cashews
- 1/2 cup rolled oats
- 1/4 cup protein powder
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
Instructions
- Place the pitted dates and cashews in a food processor and pulse until finely chopped.
- Add the rolled oats, protein powder, honey, vanilla extract, and sea salt, then process until the mixture is well combined and sticky.
- Line an 8×8 inch baking pan with parchment paper.
- Press the mixture evenly into the prepared pan, pressing down firmly to ensure it sticks together.
- Chill in the refrigerator for at least 1 hour to set.
- Once set, cut into 12 squares and serve. Store any leftovers in an airtight container in the refrigerator.
