These no-bake cashew and date protein squares are naturally sweet and packed with energy, perfect for a quick snack.

Ingredients

  • 1 cup pitted dates
  • 1 cup raw cashews
  • 1/2 cup rolled oats
  • 1/4 cup protein powder
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions

  1. Place the pitted dates and cashews in a food processor and pulse until finely chopped.
  2. Add the rolled oats, protein powder, honey, vanilla extract, and sea salt, then process until the mixture is well combined and sticky.
  3. Line an 8×8 inch baking pan with parchment paper.
  4. Press the mixture evenly into the prepared pan, pressing down firmly to ensure it sticks together.
  5. Chill in the refrigerator for at least 1 hour to set.
  6. Once set, cut into 12 squares and serve. Store any leftovers in an airtight container in the refrigerator.
