Ingredients

  • 4 slices ciabatta bread
  • 1/2 cup pesto sauce
  • 1 lb grilled chicken breast, sliced
  • 4 slices provolone cheese
  • 2 tbsp butter

Instructions

  1. Preheat a panini press or grill pan over medium heat.
  2. Spread pesto on one side of each slice of ciabatta bread.
  3. On the non-pesto side, layer slices of grilled chicken and provolone cheese evenly.
  4. Cover with the remaining bread slices, pesto side inwards, to form sandwiches.
  5. Using a butter knife or spatula, lightly coat the outsides of the sandwiches with butter.
  6. Place the sandwiches on the preheated panini press or grill pan.
  7. Grill for 3-4 minutes, or until the bread is crispy and golden brown and the cheese is melted, pressing occasionally to ensure even cooking.
  8. Remove the sandwiches from the heat and let them cool slightly before slicing each panini in half.
  9. Serve the panini while still warm.
