  • 2 carrots, diced
  • 2 celery stalks, diced

  • 6 cups chicken broth
  • 1 cup cooked chicken, shredded
  • 1 cup small pasta
  • 1 cup fresh spinach, chopped
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a 6-quart saucepan over medium heat.
  2. Add diced onion and garlic, sauté until onion is translucent, about 3 minutes.
  3. Stir in diced carrots and celery, cooking for an additional 5 minutes.
  4. Add dried oregano and stir to combine.
  5. Pour in chicken broth, bring to a boil then reduce heat and let simmer for 15 minutes.
  6. Add shredded chicken and pasta, cooking until pasta is tender, approximately 10 minutes.
  7. Stir in chopped spinach and cook until wilted, about 2 minutes.
  8. Season with salt and pepper to taste.
  9. Remove from heat, sprinkle with chopped parsley before serving.
