Ingredients
- 4 boneless skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup butter
- 1/2 cup chicken broth
- 1/4 cup lemon juice, freshly squeezed
- 1/4 cup capers, drained
- 2 tablespoons fresh parsley, chopped
Instructions
- Pound the chicken breasts to even thickness using a meat mallet.
- In a shallow dish, combine flour, salt, and pepper. Dredge chicken breasts in this mixture.
- Heat olive oil in a 9-inch skillet over medium heat. Cook chicken until golden brown, about 4 minutes per side.
