Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 pound chorizo
  • 2 cups onions, thinly sliced
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly, pat them dry, and pierce each one several times with a fork.
  3. Rub the potatoes with olive oil and place them directly on the oven rack or on a baking sheet. Bake for 1 hour or until tender.
