Ingredients
- 4 large russet potatoes
- 1 tablespoon olive oil
- 1 pound chorizo
- 2 cups onions, thinly sliced
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh chives

Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes thoroughly, pat them dry, and pierce each one several times with a fork.
