Ingredients

  • 8 slices rye bread
  • 1 pound corned beef, thinly sliced
  • 8 slices Swiss cheese
  • 1 cup sauerkraut, drained
  • 1/2 cup Russian dressing
  • 2 tablespoons butter, softened

Instructions

  1. Preheat a skillet over medium heat.
  2. Spread butter on one side of each slice of rye bread.
  3. On the unbuttered side of four slices, layer corned beef, sauerkraut, Swiss cheese, and a drizzle of Russian dressing.
  4. Top each with another slice of bread, buttered side out, to form a sandwich.
  5. Grill each sandwich in the skillet until the bread is golden brown and the cheese has melted, about 3-4 minutes per side.
  6. Cut sandwiches in half before serving.
