Ingredients
- 1 1/2 cup dates, pitted
- 1 cup unsweetened shredded coconut
- 1/2 cup raw cashews
- 1/4 cup lime juice
- 1 Tbsp lime zest
- 1/4 tsp salt
Instructions
- In a food processor, blend the pitted dates until they form a smooth paste.
- Add the unsweetened shredded coconut, raw cashews, lime juice, lime zest, and salt to the food processor.
- Blend all ingredients until well combined and the mixture starts to clump together and stick.
- Line a pan with parchment paper and press the mixture evenly into it.
- Refrigerate the pan for at least 1 hour to allow the bars to set.
- Once set, remove from the refrigerator and cut into bars.
