Instructions

  1. Preheat the oven to 400°F (200°C) and line a muffin pan with paper liners.
  2. In a large bowl, combine the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, melted butter, eggs, and maple syrup until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir just until moistened. Do not overmix.
  5. Spoon the batter evenly into the prepared muffin cups, filling each about 3/4 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  7. Remove the muffins from the oven and let them cool in the pan for 5 minutes. Then transfer to a wire rack to cool completely.
  8. For the maple butter, beat the softened butter and maple syrup together in a small bowl until smooth and creamy.
