These date and walnut energy bars offer a natural source of energy, perfect for snacking or a quick breakfast.
Ingredients
- 2 cups pitted dates
- 1 cup walnuts
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1/8 teaspoon salt
Instructions
- In a food processor, combine the pitted dates and walnuts. Blend until the mixture becomes sticky and well combined.
- Add vanilla extract, cinnamon, and salt to the food processor. Blend again to incorporate all ingredients.
- Line an 8" x 8" baking dish with parchment paper. Transfer the date and walnut mixture into the dish.
- Press down firmly with a spatula to create an even layer.
- Refrigerate the mixture for 1 hour to allow it to firm up.
- Once set, remove from the fridge and cut into 8 bars.
- Store energy bars in an airtight container in the fridge for up to one week.
