Ingredients

  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 2 eggs, beaten
  • 1 cup mixed vegetables, frozen
  • 2 green onions, sliced

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large pan over medium heat until shimmering.
  2. Add minced garlic and cook until fragrant, about 1 minute, taking care not to burn.
  3. Add the shredded chicken to the pan and cook until it is heated through.
  4. Push the chicken to one side of the pan and pour the beaten eggs into the empty side.
  5. Scramble the eggs until fully cooked, then mix them with the chicken.
  6. Add the remaining tablespoon of oil to the pan and increase the heat to high.
  7. Add the cold rice, breaking up any clumps with a spatula, and stir-fry until the rice is thoroughly heated, about 3 to 5 minutes.
  8. Stir in soy sauce, fish sauce, and sugar, mixing well to combine with the rice.
  9. Add the frozen mixed vegetables and cook until they are heated through and tender, about 3 minutes.
  10. Add sliced green onions and stir to combine all ingredients evenly.
