Ingredients

  • 1 large cauliflower head
  • 2 tablespoons olive oil
  • 2 teaspoons garlic, minced
  • 1/2 cup parmesan cheese, grated
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chimichurri sauce

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Remove the leaves and trim the stem of the cauliflower while keeping it intact.
  3. Slice the cauliflower head into 1-inch thick steaks.
  4. In a small bowl, mix olive oil, minced garlic, salt, and pepper.
  5. Brush both sides of the cauliflower steaks with the olive oil mixture.
  6. Place the steaks on a baking sheet lined with parchment paper.
  7. Sprinkle grated parmesan cheese evenly over the steaks.
  8. Roast in the oven for 30 minutes, flipping the steaks halfway through, until golden and tender.
  9. Remove from the oven and let rest for 5 minutes.
