Ingredients

  • 1 whole chicken, whole (about 3-4 lbs)
  • 2 cups jasmine rice
  • 1 inch ginger, sliced
  • 2 cloves garlic, smashed
  • 2 stalks green onions
  • 1 Tbsp sesame oil
  • salt
  • white pepper

Instructions

  1. Rinse the chicken inside and out thoroughly. Rub salt all over the chicken and inside the cavity, then rinse off the salt.
  2. In a large pot, add enough water to submerge the chicken, along with the ginger, garlic, and 1 stalk of green onions. Bring the water to a boil.
  3. Carefully lower the chicken into the pot, ensuring it is fully covered by water. Once boiling, turn off the heat and cover the pot with a lid.
  4. Let the chicken sit in the hot water for 30 min. During this time, prepare an ice bath.
  5. Remove the chicken from the pot and place it in the ice bath to cool. Reserve the chicken broth for cooking the rice.
  6. Rinse the rice until the water runs clear to remove excess starch. In a rice cooker, add sesame oil and sauté the rice for about 1 min until slightly translucent.
  7. Add the reserved chicken broth, a pinch of salt, and white pepper to the rice cooker. Start the rice cooker to cook the rice.
  8. While the rice is cooking, chop the cooled chicken into serving pieces.
  9. Serve the chicken with the fragrant rice, along with ginger paste, chili sauce, and soy sauce.
