Ingredients

  • 1 cup natural peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 cup almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup fruit-sweetened jam

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the peanut butter, honey, vanilla extract, and egg. Mix until smooth.
  3. Add the almond flour, baking soda, and salt to the wet mixture. Stir until a dough forms.
  4. Scoop tablespoon-sized portions of the dough and roll them into balls. Place them on the prepared baking sheet.
  5. With your thumb or the back of a spoon, create an indent in the center of each cookie.
  6. Fill each indent with a small amount of fruit-sweetened jam.
  7. Bake the cookies for 12 minutes, or until they are set and slightly golden. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  8. Enjoy the cookies once they are completely cool, or store them in an airtight container for up to 5 days.
