Ingredients

  • 8 chicken drumsticks
  • 1/2 cup unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, combine softened butter, minced garlic, chopped rosemary, and chopped thyme to make the herb butter.
  3. Pat the chicken drumsticks dry with paper towels and season them evenly with salt and pepper.
  4. In a large ovenproof skillet, heat olive oil over medium-high heat.
  5. Add the drumsticks to the skillet and sear for 5 minutes on each side until golden brown.
  6. Remove the skillet from heat and generously spread the herb butter over the drumsticks.
  7. Transfer the skillet to the preheated oven and roast for 30-35 minutes, until the chicken is cooked through and juices run clear.
  8. Occasionally baste the drumsticks with the butter in the skillet during baking to enhance the flavor.
  9. Remove from the oven and let rest for 5 minutes before serving.
