These herbed cottage cheese stuffed peppers are a quick and tasty dish bursting with fresh flavors and vibrant colors.
Ingredients
- 4 bell peppers, halved and seeds removed
- 1 cup cottage cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Place bell pepper halves, cut side up, in a 9×13-inch baking dish.
- In a bowl, combine cottage cheese, cherry tomatoes, basil, olive oil, oregano, salt, and black pepper.
- Stuff each bell pepper half with the cottage cheese mixture, mounding it slightly.
- Cover the baking dish with aluminum foil and bake in preheated oven for 30 minutes.
- Remove the foil and continue to bake for an additional 10-15 minutes, until the peppers are tender.
