These herbed cottage cheese stuffed peppers are a quick and tasty dish bursting with fresh flavors and vibrant colors.

Ingredients

  • 4 bell peppers, halved and seeds removed
  • 1 cup cottage cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place bell pepper halves, cut side up, in a 9×13-inch baking dish.
  3. In a bowl, combine cottage cheese, cherry tomatoes, basil, olive oil, oregano, salt, and black pepper.
  4. Stuff each bell pepper half with the cottage cheese mixture, mounding it slightly.
  5. Cover the baking dish with aluminum foil and bake in preheated oven for 30 minutes.
  6. Remove the foil and continue to bake for an additional 10-15 minutes, until the peppers are tender.
  7. Carefully remove from oven and let cool slightly before serving.
