Ingredients

  • 1 pound mini bell peppers
  • 1 cup hummus
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil

Instructions

  1. Wash and dry the mini bell peppers. Cut each pepper in half lengthwise and remove the seeds.
  2. Spoon approximately 1 tablespoon of hummus into each pepper half, smoothing it out with the back of the spoon.
  3. Sprinkle crumbled feta cheese over the hummus-filled peppers.
  4. Drizzle olive oil over the stuffed peppers for added flavor.
