Ingredients

  • 2 cans white beans, drained and rinsed
  • 1 bunch kale, stems removed and chopped

  • 1/2 tsp red pepper flakes
  • 1/4 cup olive oil

Instructions

  1. Heat 1/4 cup olive oil in a large pot over medium heat.

  3. Stir in the dried thyme and red pepper flakes.

  6. Add the drained and rinsed white beans to the pot, and simmer for an additional 15 minutes.
  7. Taste and adjust seasoning as needed with salt and pepper.
