Instructions

  1. Soak the julienned burdock roots in water for 10 minutes to remove excess bitterness.
  2. Drain the burdock roots thoroughly before cooking.
  3. Heat the sesame oil in a pan over medium heat and add the drained burdock roots and carrots. Stir-fry for 2 minutes until slightly softened.
  4. Add soy sauce, mirin, and sugar to the pan. Stir well and cook for an additional 5 minutes or until the liquid is absorbed and the vegetables are tender.
  5. Transfer the cooked vegetables to a serving dish and sprinkle toasted sesame seeds on top before serving.
