Knefeh (كنافة)

Knefeh is a delightful Middle Eastern dessert known for its layers of crunchy shredded phyllo dough, creamy cheese, and fragrant sweet syrup. Ingredients

  • 1 package shredded phyllo dough
  • 1 cup unsalted butter, melted
  • 2 cups shredded mozzarella cheese
  • 2 cups shredded unsalted akawi cheese
  • 1 cup sugar
  • 1 cup water
  • 1 Tbsp rose water
  • 1 cup pistachios, chopped, for garnish

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Brush melted butter on the bottom of a baking dish.
  3. Place half of the shredded phyllo dough in the dish, brushing with more butter between layers.
  4. Combine mozzarella and akawi cheese in a bowl, then evenly spread the mixture over the phyllo.
  5. Cover with the remaining phyllo dough, ensuring all cheese is covered, and brush the top with butter.
  6. Bake in the preheated oven for 40 to 45 minutes, or until the top is golden brown and crispy.
  7. While the Knefeh bakes, prepare the syrup by combining sugar, water, and rose water in a saucepan over medium heat. Stir until the sugar dissolves completely and the mixture slightly thickens, then remove from heat.
  8. As soon as the Knefeh is done baking, pour the warm syrup evenly over it, allowing it to soak in.
  9. Garnish the Knefeh with chopped pistachios before serving.
