Ingredients
- 1 whole chicken, about 4 pounds
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, zested and juiced
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1 lemon, sliced
Instructions
- Preheat the oven to 375°F (190°C).
- Pat the chicken dry with paper towels and place it in a 9" x 13" baking dish.
- In a small bowl, mix together olive oil, salt, pepper, lemon zest, lemon juice, garlic, thyme, and rosemary.
- Pour the mixture over the chicken, rubbing it all over the skin and inside the cavity for even coverage.
- Place the lemon slices around the chicken in the baking dish.
- Cover the dish with aluminum foil and roast the chicken in the preheated oven for 1 hour.
- Remove the foil and continue roasting for an additional 30-45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown.
- Let the chicken rest for 10 minutes before carving and serving.
