Ingredients
- 4 large eggs
- 1/2 cup bell peppers, diced
- 1/2 cup onions, diced
- 1 cup cheddar cheese, shredded
- 8 whole flour tortillas
- 1 Tbsp butter
Instructions
- In a skillet, sauté the bell peppers and onions over medium heat for about 5 minutes until soft. Remove from the skillet and set aside.
- In the same skillet, scramble the eggs until cooked through. Season with a pinch of salt and pepper.
- Lay out 4 tortillas and evenly distribute half of the cheese on each one. Top with the scrambled eggs, sautéed vegetables, and the remaining cheese. Place another tortilla on top of each.
- In a clean skillet, melt the butter over medium heat. Cook each quesadilla for 2 to 3 minutes on each side until golden brown and crispy.
- Slice the quesadillas into wedges and serve immediately.
