Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cheddar cheese, shredded
  • 12 mini flour tortillas
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • salsa, for serving

Instructions

  1. In a bowl, combine the shredded chicken, cheddar cheese, salt, and black pepper.
  2. Place a mini tortilla on a flat surface. Add about 2 tablespoons of the chicken mixture to one side of the tortilla.
  3. Fold the tortilla over to form a half-moon shape and press gently to seal.
  4. Repeat the filling and folding process with the remaining tortillas and filling.
  5. Heat a non-stick skillet over medium heat and add 1 tablespoon of butter.
  6. Place the folded quesadillas in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
  7. Remove from skillet and repeat with remaining quesadillas, adding more butter as needed.
  8. Cut the quesadillas into wedges if desired and serve with salsa.
