Ingredients
- 2 cups cooked chicken, shredded
- 1 cup cheddar cheese, shredded
- 12 mini flour tortillas
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- salsa, for serving
Instructions
- In a bowl, combine the shredded chicken, cheddar cheese, salt, and black pepper.
- Place a mini tortilla on a flat surface. Add about 2 tablespoons of the chicken mixture to one side of the tortilla.
- Fold the tortilla over to form a half-moon shape and press gently to seal.
- Repeat the filling and folding process with the remaining tortillas and filling.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of butter.
- Place the folded quesadillas in the skillet and cook for 2-3 minutes on each side, or until golden brown and crispy.
- Remove from skillet and repeat with remaining quesadillas, adding more butter as needed.
- Cut the quesadillas into wedges if desired and serve with salsa.
