Bright and refreshing, this citrus ceviche with avocado is perfect for a light meal or appetizer.
Ingredients
- 1 pound white fish fillet, diced
- 1/2 cup lime juice, freshly squeezed
- 1/2 cup orange juice, freshly squeezed
- 1 red onion, finely chopped
- 1 jalapeño, seeded and chopped
- 2 avocados, diced
- 1/4 cup cilantro leaves, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place the diced fish in a glass or ceramic bowl.
- Pour the lime and orange juices over the fish, ensuring it is completely submerged.
- Cover and refrigerate for 1.5 to 2 hours to allow the fish to 'cook' in the citrus juices.
- Once the fish is opaque, drain excess juice, retaining about 1/4 cup in the bowl.
- Add the red onion, jalapeño, diced avocados, cilantro, salt, and pepper to the bowl.
- Gently toss all ingredients together until well combined.
- Serve chilled, with tortilla chips or on its own.
