  • 2 tsp creole seasoning
  • 1/2 tsp cayenne pepper

Instructions

  1. In a large Dutch oven, whisk together flour and oil over medium heat to make a roux, stirring constantly until it turns a dark brown color, about 15 to 20 minutes.
  2. Add onions, bell peppers, celery, and garlic to the roux. Cook, stirring frequently, until the vegetables are tender, about 8 to 10 minutes.
  3. Stir in diced tomatoes and chicken broth. Add chicken pieces and andouille sausage.
  4. Bring the mixture to a simmer, then reduce heat to low. Cover and cook for 1 hour, stirring occasionally.
  5. After 1 hour, add shrimp, okra, creole seasoning, and cayenne pepper to the pot.
  6. Simmer uncovered for an additional 30 minutes, or until shrimp is pink and cooked through.
  7. Remove from heat. Serve the gumbo hot over cooked rice or with slices of crusty bread.
