Ingredients
- 1 pound large shrimp, peeled and deveined
- 12 ounces andouille sausage, sliced
- 2 cups okra, trimmed and sliced
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine shrimp, sausage, and okra.
- Drizzle with olive oil and sprinkle with Cajun seasoning, salt, and pepper. Toss to coat evenly.
- Arrange the mixture in a single layer on a large sheet pan.
- Place lemon slices over the top of the shrimp and okra.
- Roast in the preheated oven for 15-20 minutes, until the shrimp are cooked through and the edges of the okra are crispy.
