Indulge in tender salmon spiced with Cajun seasoning atop fettuccine, partnered with a rich, creamy Cajun sauce.

Ingredients

  • 2 salmon fillets, skinless
  • 2 tablespoons Cajun seasoning
  • 12 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup Parmesan cheese, grated
  • 1 lemon, juiced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the fettuccine according to package instructions until al dente. Drain and set aside.
  2. Season the salmon fillets with Cajun seasoning ensuring even coverage.
  3. Heat olive oil in a large skillet over medium heat. Cook the salmon for 4-5 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add garlic and sauté for 1-2 minutes until fragrant.
  5. Pour in the chicken broth and lemon juice, stirring to deglaze the skillet. Let it simmer for 2-3 minutes.
  6. Reduce the heat to low and stir in the heavy cream. Let it simmer for another 2-3 minutes, stirring occasionally.
  7. Add the Parmesan cheese gradually, stirring continuously until the sauce is smooth and creamy.
  8. Season the sauce with salt and black pepper to taste.
  9. Toss the cooked fettuccine in the creamy sauce until well coated.
  10. Place the salmon on top of the pasta and sprinkle with fresh parsley before serving.
