Crispy and flavorful, air-fried shrimp po' boys are perfect with tangy remoulade sauce for a satisfying meal.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- 2 eggs
- 1/2 cup mayonnaise
- 2 tablespoons mustard
- 1 tablespoon capers, chopped
- 1 teaspoon Dijon mustard
- 2 tablespoons pickle relish
- 4 hoagie rolls
- 1 cup lettuce, shredded
- 2 tomatoes, sliced
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a bowl, soak shrimp in buttermilk for 10 minutes.
- In another bowl, combine flour, cornmeal, paprika, garlic powder, and cayenne pepper.
- Remove shrimp from buttermilk, then coat in the flour mixture.
- In a separate bowl, beat the eggs and dip each floured shrimp into the eggs.
- Place shrimp in the air fryer basket in a single layer and air-fry for 6-8 minutes, turning halfway.
- In a small bowl, mix mayonnaise, mustard, capers, Dijon mustard, and pickle relish to make the remoulade sauce.
- Spread remoulade sauce inside each hoagie roll.
- Layer each roll with shredded lettuce, tomato slices, and air-fried shrimp.
