Malfouf (ملفوف)

Ingredients

  • 1 whole head of cabbage
  • 1 lb ground beef
  • 1 cup rice, uncooked
  • 1 can tomato sauce

Instructions

  1. Fill a large pot with water and bring to a boil. Carefully remove the outer leaves of the cabbage and blanch them in the boiling water for 2 to 3 minutes until soft. Remove and set aside to cool slightly.
  2. In a bowl, combine the ground beef, rice, cumin, and paprika. Mix until well combined.
  3. Place a spoonful of the beef and rice mixture onto each cabbage leaf, then roll them up, tucking in the sides to secure the filling.
  4. In a separate pot, pour the tomato sauce and layer any remaining cabbage leaves at the bottom. Arrange the stuffed cabbage rolls on top of the leaves.
  5. Cover the pot and simmer on low heat for 1 hour to allow the flavors to meld.
  6. Transfer the rolls to a serving dish and serve warm.
