Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 teaspoons salt
  • 1/4 teaspoons black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cups chicken broth
  • 1/2 cups grated Parmesan cheese
  • 1/2 cups sun-dried tomatoes, chopped

  • 1 teaspoon dried thyme
  • 1/4 teaspoons crushed red pepper flakes
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Season the chicken breasts with salt and black pepper on both sides.
  2. In a large skillet over medium-high heat, heat the olive oil.
  3. Add the chicken breasts to the skillet and cook for 4-5 minutes on each side until golden. Remove them from the skillet and set aside.
  4. In the same skillet, lower the heat to medium and add butter and minced garlic.
  5. Cook the garlic for 1-2 minutes until fragrant, then stir in the heavy cream and chicken broth.
  6. Add Parmesan cheese, sun-dried tomatoes, oregano, thyme, and crushed red pepper flakes. Stir to combine.
  7. Bring the mixture to a simmer, let it thicken slightly, and then return the chicken breasts to the skillet.
  8. Simmer the chicken in the sauce for about 10-12 minutes until cooked through.
  9. Garnish with fresh basil before serving. Enjoy with your choice of pasta or rice.
