- Heat oil in a pan, add mustard seeds and let them splutter. Add cumin seeds, curry leaves, and green chilies.
- Add chopped onions to the pan and sauté until translucent. Stir in turmeric and mashed potatoes.
- Season the potato mixture with salt. Cook for 5-7 minutes, then set aside.
- Heat a flat skillet over medium heat. Pour a ladleful of dosa batter and spread thinly in a circular motion.
- Drizzle some oil around the edges. Cook until the dosa turns golden and crispy.
- Place a portion of potato filling in the center of the dosa and fold. Serve hot with chutney and sambar.
