Masala Dosas (South Indian Crepes)

Ingredients

  • 2 cups rice, soaked
  • 1 cup urad dal, soaked
  • 1/2 teaspoon fenugreek seeds, soaked
  • 2 tablespoons vegetable oil
  • 3 cups potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 2 teaspoons mustard seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 2 green chilies, chopped
  • 10 curry leaves
  • Salt to taste

Instructions

  1. In a blender, grind soaked rice, urad dal, and fenugreek seeds with water to form a smooth batter. Let it ferment overnight.
  2. Heat oil in a pan, add mustard seeds and let them splutter. Add cumin seeds, curry leaves, and green chilies.
  3. Add chopped onions to the pan and sauté until translucent. Stir in turmeric and mashed potatoes.
  4. Season the potato mixture with salt. Cook for 5-7 minutes, then set aside.
  5. Heat a flat skillet over medium heat. Pour a ladleful of dosa batter and spread thinly in a circular motion.
  6. Drizzle some oil around the edges. Cook until the dosa turns golden and crispy.
  7. Place a portion of potato filling in the center of the dosa and fold. Serve hot with chutney and sambar.
