Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/2 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Rinse quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa and a pinch of salt.
  3. Reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is tender and water is absorbed.
  4. Fluff the quinoa gently with a fork and let it cool slightly.
  5. In a large bowl, combine cherry tomatoes, cucumber, red onion, and kalamata olives.
  6. Add the cooked quinoa to the vegetable mixture and toss gently to combine.
  7. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and black pepper.
  8. Pour the dressing over the quinoa salad and mix until well coated.
  9. Sprinkle the crumbled feta cheese on top of the salad.
  10. Serve immediately or refrigerate for 30 minutes to let the flavors meld before serving.
