Ingredients

  • 750 g mutton, cubed
  • 2 cups basmati rice
  • 1 cup yogurt
  • 2 whole onions, thinly sliced and fried until crispy
  • 4 whole green chilies, slit
  • 1 bunch fresh coriander leaves, chopped
  • 1 bunch fresh mint leaves, chopped
  • 4 whole cloves
  • 2 whole cinnamon sticks
  • 1 whole bay leaf
  • 1/2 tsp turmeric powder
  • 2 tsp red chili powder
  • 3 tsp biryani masala powder
  • 5 cups water
  • 1/2 cup ghee
  • 1/2 cup oil

Instructions

  1. Marinate the mutton with yogurt, turmeric powder, red chili powder, biryani masala powder, half of the fried onions, half of the chopped coriander leaves, and half of the chopped mint leaves. Let it marinate for at least 2 hours.
  2. Wash the basmati rice and soak it in water for 30 minutes.
  3. Heat ghee and oil in a large pot. Add cloves, cinnamon sticks, and bay leaf, and sauté until fragrant.
  4. Add the marinated mutton and cook until it is browned.
  5. Layer the rice over the mutton, pour in the water, and sprinkle the remaining fried onions, green chilies, and chopped coriander and mint leaves over the top.
  6. Cover and cook on low heat until the rice is tender and the mutton is cooked through, about 25 to 30 minutes.
  7. Fluff the rice gently with a fork before serving.
