Ingredients

  • 2 cups jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1 tsp salt
  • 1 cup anchovies
  • 1/2 cup peanuts
  • 4 whole eggs, boiled
  • 1 whole cucumber, sliced

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a pot, combine jasmine rice, coconut milk, water, and salt. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 min, or until the rice is tender and the liquid is absorbed.
  3. In a separate pan, fry the anchovies over medium heat until they are crispy, about 3-5 min. Remove and set aside.
  4. In the same pan, fry the peanuts until they are golden brown, taking care not to burn them. Remove and set aside.
  5. Peel the boiled eggs and slice them in half.
  6. Serve the coconut rice with sambal, fried anchovies, fried peanuts, boiled eggs, and cucumber slices arranged on the side.
