Nutty Quinoa Granola with Dried Fruit Medley

This crunchy nutty quinoa granola is studded with a medley of dried fruits, creating a satisfying and nutritious snack.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups old-fashioned oats
  • 1 cup raw almonds, chopped
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup dried cranberries
  • 1 cup dried apricots, chopped

Instructions

  1. Preheat the oven to 325°F (160°C). Line a 9 x 13-inch baking sheet with parchment paper.
  2. In a large bowl, combine quinoa, oats, and chopped almonds.
  3. In a separate bowl, whisk together maple syrup, melted coconut oil, vanilla extract, ground cinnamon, and salt.
  4. Pour the wet mixture over the dry ingredients and stir until all the dry ingredients are well coated.
  5. Spread the granola mixture evenly onto the prepared baking sheet.
  6. Bake in the preheated oven for 15 minutes. Stir granola, then bake for another 15 minutes until golden brown.
  7. Remove granola from oven and let it cool completely on a wire rack.
  8. Once cooled, add dried cranberries and chopped dried apricots, stirring to combine.
  9. Store granola in an airtight container for up to two weeks.
