Ingredients
- 1 cup cucumber, thinly sliced
- 1 cup carrot, julienned
- 1/2 cup pineapple, diced
- 1 cup cabbage, shredded
- 1 cup green beans, chopped
- 1/2 cup roasted peanuts, crushed
- 1 tbsp vegetable oil
- 1 tsp turmeric powder
- 3 tbsp sugar
- 1/2 cup vinegar
- 1/2 cup water
- salt
Instructions
- Slice the cucumber, julienne the carrot, dice the pineapple, shred the cabbage, and chop the green beans.
- Heat the vegetable oil in a pan over medium heat, then add the turmeric powder and stir until fragrant, about 1-2 minutes.
- Add the prepared vegetables to the pan and sauté for 3-4 minutes until they are slightly softened.
- In a separate bowl, combine the sugar, vinegar, water, and a pinch of salt to create the pickling sauce.
- Pour the pickling sauce over the vegetables in the pan and stir well to coat evenly.
- Simmer the mixture for 5-7 minutes until the vegetables are tender but still retain their crunch.
- Remove from heat and allow the Acar to cool before transferring it to a serving dish.
- Sprinkle the crushed roasted peanuts on top before serving.
