Ingredients

  • 1 cup farro
  • 2 cups water
  • 1/2 cup pesto sauce
  • 1/3 cup sun-dried tomatoes, julienned
  • 1/4 cup pine nuts, toasted
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • salt and pepper to taste

Instructions

  1. Rinse the farro under cold water and drain.
  2. In a medium saucepan, combine the farro and water. Bring to a boil over high heat.
  3. Reduce the heat to low, cover, and simmer for 20-25 minutes until the farro is tender and the water is absorbed.
  4. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
  5. Add the cooked farro to the skillet and stir in the pesto sauce, mixing well to coat the grains evenly.
  6. Stir in the sun-dried tomatoes and cook for another 2-3 minutes until heated through.
  7. Season with salt and pepper to taste.
  8. Remove from heat and top with toasted pine nuts before serving.
