Ingredients

  • 1 package active dry yeast
  • 1 cup warm water
  • 2 tbsp sugar
  • 1 cup cooked quinoa
  • 1 cup cooked amaranth
  • 3 tbsp olive oil
  • 1 tsp salt
  • 3-4 cups all-purpose flour

Instructions

  1. In a large bowl, dissolve active dry yeast in warm water and let sit for 5 minutes until foamy.
  2. Add sugar, cooked quinoa, cooked amaranth, olive oil, and salt to the yeast mixture and stir well.
  3. Gradually stir in all-purpose flour, 1 cup at a time, until a soft dough forms that pulls away from the sides of the bowl.
  4. Knead the dough on a floured surface for 6-8 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, turning once to grease the top. Cover with a damp cloth and let rise in a warm place until doubled in size, about 1 hour.
  6. Once risen, punch down the dough to remove air bubbles and divide it into 12 equal pieces. Shape each piece into a roll and place them on a baking sheet lined with parchment paper.
  7. Cover the rolls with a clean kitchen towel and let them rise again for 30 minutes until puffy.
  8. Preheat the oven to 375°F (190°C) while the rolls rise.
  9. Bake the rolls in the preheated oven for 18-20 minutes until they are golden brown and sound hollow when tapped on the bottom.
