Quinoa and Black Bean Brownies with Walnut Swirl

Ingredients

  • 1 cup cups cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1/2 cup cups cocoa powder
  • 1/4 cup cups maple syrup
  • 1/4 cup cups coconut oil, melted
  • 1 teaspoon teaspoons vanilla extract
  • 1/2 teaspoon teaspoons baking powder
  • 1/4 teaspoon teaspoons salt
  • 1/4 cup cups chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. In a food processor, blend cooked quinoa and black beans until smooth.
  3. Add cocoa powder, maple syrup, melted coconut oil, vanilla extract, baking powder, and salt to the processor. Blend until well combined.
  4. Pour the batter into the prepared baking pan, spreading evenly.
  5. Sprinkle chopped walnuts over the top of the batter.
  6. Bake in the preheated oven for 20-25 minutes, until the edges are firm.
  7. Allow the brownies to cool in the pan for 10 minutes before slicing into 8 pieces.
