Delight in the rich flavors of this hearty venison stew, enhanced by aromatic juniper berries and fragrant rosemary. Ideal for a cozy dinner on a chilly evening, this dish highlights the distinctive taste of game meat. The slow cooking process tenderizes the venison, allowing flavors to meld beautifully. Pair this stew with crusty bread or creamy mashed potatoes for a delicious meal.
Ingredients
- 2 lb venison stew meat
- 1/2 cup juniper berries
- 2 sprigs fresh rosemary
- 1 whole onion, chopped
- 2 whole carrots, sliced
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1/4 cup red wine
- 2 Tbsp tomato paste
- 1 Tbsp flour
- 2 Tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium-high heat. Season the venison with salt and pepper and brown it in batches until well-seared on all sides. Remove and set aside.
- Add more oil if needed and sauté the onion, carrots, and celery until softened, about 5 minutes. Stir in the garlic and tomato paste, cooking for an additional 2 minutes.
- Sprinkle flour over the vegetables and cook for 1 minute, stirring constantly. Deglaze the pot with red wine, scraping up any browned bits from the bottom.
- Return the venison to the pot, add the juniper berries, rosemary, and beef broth. Bring to a simmer, then reduce the heat to low and cover.
- Cook for 1.5 to 2 hours, stirring occasionally, until the venison is tender. Taste and adjust seasoning with salt and pepper.
- Serve hot, garnished with fresh rosemary, alongside crusty bread or mashed potatoes.
