Ingredients
- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 cup granulated sugar
- 2 Tbsp all-purpose flour
- 1/4 cup lemon juice
- 1 Tbsp lemon zest
Instructions
- Preheat the oven to 350°F (180°C).
- In a mixing bowl, combine the all-purpose flour, powdered sugar, and softened butter. Press the mixture into the bottom of a greased 9×9 inch baking pan to form an even layer.
- Bake the crust for 15 to 20 minutes, or until it is lightly golden brown.
- While the crust is baking, in another bowl, whisk together the eggs, granulated sugar, all-purpose flour, lemon juice, and lemon zest until smooth.
- When the crust is ready, remove it from the oven and pour the lemon mixture evenly over the hot crust.
- Bake for an additional 20 to 25 minutes, or until the lemon filling is set and lightly golden.
- Allow the bars to cool completely in the pan on a wire rack before cutting them into squares. If desired, dust the top with additional powdered sugar before serving.
