- 2 Tbsp Cajun seasoning
- 1 cup long grain white rice
- 1 cup bell pepper, diced

- 2 Tbsp olive oil
Instructions
- In a large bowl, coat the chicken thighs evenly with Cajun seasoning.
- Heat olive oil in a large pot over medium-high heat.
