A vibrant, creamy sauce pairing bold heat with smooth vodka and tangy tomatoes, perfect over al dente penne.

Ingredients

  • 12 oz penne pasta
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1 cup vodka
  • 1 can crushed tomatoes (28 oz)
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 0 Salt, to taste
  • 0 Black pepper, to taste
  • 0 Fresh basil, for garnish

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and red pepper flakes to the skillet and cook for an additional minute until fragrant.
  4. Pour in the vodka and stir, allowing it to simmer and reduce by half, about 5 minutes.
  5. Stir in the crushed tomatoes and bring the mixture to a simmer. Let it cook for about 10 minutes, stirring occasionally.
  6. Reduce the heat to low and stir in the heavy cream. Let the sauce simmer gently, incorporating the cream.
  7. Add the grated parmesan cheese, stirring constantly until melted and smooth.
  8. Season the sauce with salt and black pepper to taste.
  9. Toss the cooked penne in the sauce until well coated.
  10. Serve hot, garnished with fresh basil leaves.
